An ancient medieval recipe, easy and fast, for a Christmas cake perfect for every occasion: the almond brittle.
To prepare it you need only 300 gr. shelled almonds, 200 gr. sugar and a little’ of vanilla extract.
Just Toast the almonds in the oven and melt the sugar in 80 ml. of water until a dark caramel color, dopodiché unitelo alle mandorle ancora calde e alla vanillina e mescolate bene.
Pour the mixture on a marble floor sprinkled with oil and, with the help of a spatula and a knife perfectly also oleates, knead it in such a way as to obtain a compact and homogeneous mass.
