The recipe “Chicken with Marsala” It is taken by Artusi

After some time I go back to post recipes taken directly from’Artusi, that long, successful on blog.

For those who do not know or do not remember, “Artusi” It is an abbreviation which is commonly known cookbook The Science of Cooking and the Art of Eating well Foodie celebrate Pellegrino Artusi (1820-1911).

This is the recipe Chicken with Marsala:

“Cut the chicken into large pieces and place in a saucepan with a chopped onion, chopped fine and a bit of butter. Season with salt and pepper and when browned, add the broth and pull it in baking. Pass the sauce, skim off the fat (with a sheet of absorbent paper n.d.a.) if necessary, and return the chicken to the fire with a little’ marsala, levandolo soon as he has taken the boil” (Photo gives: casartusi.it).

    Pellegrino Artusi, as well as great gastronome, It tried to give maximum publicity to the Italian language, at a time when Italy was building. He avoided foreign words carefully, especially the Frenchified, so fashionable in his day. It was recommended by the housewives who did bearers, in family, a good Italian.
    The same goes for its cuisine, purely Italian, or at most regional. So why not put an image with the original title, or in Italian?

      Salve, Thanks for the info (if not mistaken Pellegrino Artusi was also the author of literary essays), but what about the image I chose it because the relevant Article of all those available. I posted several recipes of Artusi, each with its image, so every time I have to look for a new…and they are not infinite. The web has its rule 🙂

        I see, and the rest “L'Artusi” It is one of the most translated books, in all the languages!
        I liked just remember this patriotic aspect of his personality.
        It's true, he began writing essays on Foscolo and Giusti, but I would say that the most enjoyable read is that of his autobiography, and of course, its recipes!

          Exact, I knew of the essay on Foscolo, which it is one of my favorite poets. Anyway thank you very much for his statement and for the information provided 🙂
