The truffle He has always had a prestigious role at the table (you see http://www.pilloledistoria.it/3168/storia-moderna/storia-cucina-alle-origini-tartufo).

In this post I present the ancient recipe to prepare the tasty crespelle black truffle, all to try.

Here's how to do them.

Ingredients (per 4 people): 250 ml of milk, 125 gr. made with flour, 2 eggs, 150 gr. cooked ham sliced, 150 gr. Fontina sliced, 100 gr. mushroom mushroom, 70 grams of sauce, 100 grams of grated Parmesan cheese, 20 gr. of butter, 70 gr. black truffle, a bit’ nutmeg, a pinch of salt and pepper.

Proceed as explained below.

Whisk together the milk, eggs and flour until mixture is smooth, then add salt, nutmeg and pepper q.s..

Let the dough, then bake inside a pan sprinkled with the oil frittatine.

Cut the mushrooms into thin strips rather thin and cook them for a few minutes in a pan over medium heat with a little’ of butter.

Add salt.

Place a slice of Fontina and a ham on each pancake, then distribute the strips of mushrooms and some truffle slices.

Forming of the triangles with the crepes folding them in half a first time and then a second, then put them on a greased baking dish and pour over the sauce, parmesan cheese and some butter washer.

Allow to brown in the oven 5 minutes and serve the crepes along with some truffle slice very hot (photo: salepepe.it).
